(AP Photo)The number of sushi restaurants in Japan rose by 40% between 2016 and 2020, the latest year for which data is available, and sushi restaurants are the second-largest source of revenue for sushi restaurants, after rice, according to the Tokyo Metropolitan Government.

The average number of customers dining at a single sushi restaurant per day rose from 1,600 in 2015 to 2,500 in 2020.

In 2020, there were 1,500 sushi restaurants serving about 600,000 people, the ministry said.

According to the Japanese government, about 20% of Japan’s $1 trillion in annual sushi consumption comes from sushi restaurants.
